We can't help it:  Cooking Channel's staff is experiencing serious end-of-summer denial. Before we sing so long to summer, we're reminded of the fantastic summer we've had -- and the few things summer won't be complete without accomplishing. And since we're Cooking Channel, can you blame us for focusing our Summer Bucket List on summer's most iconic dishes?

Good news:  There's still just enough time left to knock these items off your Summer Bucket List, and we've got the perfect recipes to help you do it.

Heirloom Tomatoes

Editor Mandy can't get enough of this season's bounty of heirloom tomatoes. The sweet yellow varietals are her fave. Try mixing different types together and add sweet watermelon and salty feta for a summery spin on classic tomato salad. Get our list of Summer's Best Farmers Market Finds for more inspiration.

Peaches

Lindsay, our Editor, is a self proclaimed peach-a-holic. And what better way to enjoy summer's sweetest stone fruits than baking them into a warm, cream biscuit-topped cobbler? (Finished with a scoop of the best vanilla ice cream, of course.)

Lobster

Cameron, Editor and lover of all things summer, was determined to boil her own lobsters this summer...and she's done it! "It was traumatic - there was a point where I thought the lobsters might live in my apartment indefinitely." Yikes. Perhaps next time she'll shell out for de-shelled lobster at the seafood market and toss with fresh fettuccine to make this simple summer dinner.

Grilled Meat

Roberto, our Photo Editor and cocktail enthusiast,  is a big beer lover and a grilling fiend. He's planning on combining his passions this Labor Day Weekend. WATCH: Beer Can Chicken How-To.

Gazpacho

Editor Michelle thinks it just wouldn't be summer without gazpacho, and I don't blame her. Gazpacho is arguably the freshest and lightest way to utilize summer produce. While gazpacho is a perfect weeknight meal, the addition of one secret ingredient to this special recipe makes this soup perfect for this weekend's festivities: vodka.

Funnel Cake

Bridget, our Production Manager,  knows the summer would not be complete without the sweet king of the boardwalk, funnel cake. Head to the boardwalk in Bridget's home state of Jersey, or check out this Food.com recipe you can make yourself this weekend, to the delight of the child in everyone and the chagrin of your soon-to-be powdered sugar covered outfit.

Potato Salad

Iowa native and Site Manager Alison refuses to let summer go by without having her grandmother's famous German Potato Salad. But since Alison's nana in Iowa might not be able to accommodate all of our requests, we've got incredible potato salad recipes perfect for your summer picnic.

Homemade Hand-Churned Ice Cream

After one last lobster-roll-and-steamers marathon, Maine native and Site Director Mark is craving hand-churned homemade ice cream to cap off his summer. If you share his enthusiasm for homemade frozen desserts (and you should), try this recipe for a vanilla bean ice cream base with plentiful mix-ins from Zoe Francois (who doesn't mess around when it comes to sweets). BONUS: No ice cream maker is required.

Milkshakes

Site Manager Mike would like to squeeze in "4 to 30 more milkshakes before the vernal equinox. I've definitely had a few this summer but there are so many flavor combinations I have yet to try." I wonder if he's tried salted caramel or any of our Best Shakes and Smoothies Recipes.

Popsicles

Editor Sara is hell-bent on trying pop-bar's popGelato pops, and who could blame her? She seems extra jazzed about the chocolate dipped option, but since she's a pro in the kitchen, I think she should whip up a batch of these:

Ice Cream Cookie Sandwich
For me, the ice cream cookie sandwich, a.k.a. chipwich, is the pinnacle of summertime food perfection. Let's break it down: vanilla ice cream sandwiched between two chewy, slightly under-baked, heavy-on-the-brown-sugar chocolate chip cookies. And while we're at it, why not add some candied bacon, sea salt and brown butter?
