Hump Day Snack: Brazilian Papaya Rolls Compote

By: Jamie Lisanti

The 2014 FIFA World Cup has a little something for everyone, whether your eye is on the soccer ball or the players kicking it around. Since Brazil is the host nation, there's also plenty for those more interested in the food and cocktails (looking at you, caipirinhas).

So add to the festivities with this stunningly sweet dessert that’s genuinely Brazilian, and just as gorgeous as the players. This recipe for Papaya Rolls Compote, or Rolinhos de Mamão de Verde, calls for only two ingredients: a green papaya and its weight in sugar. It sounds simple enough, but the pretty, paper-thin ribbons of orange and green resemble roses when they are rolled into small spirals. Soak the fruit overnight, then cook it in a bath of sugar and water. Serve the finished product immediately or can it for later. After all, the World Cup celebration is just beginning.
