Crusting a schnitzel with breadcrumbs is very common, but this is Chef Roger Mooking's kitchen. Roger takes an everyday schnitzel and breads it with his "obedient ingredient" panko, a light Japanese-style variation of breadcrumbs. Panko and Roger will work their magic on tender pork loin and in a roasted cauliflower dish.
