Loosely wrap herbs with a damp paper towel and place in a re-sealable bag in the fridge. Give them a good rinse before using.
For herbs with roots still attached, like basil, place the roots in a jar of water with a plastic bag draped loosely over the leaves. Keep on the countertop, not the fridge where the leaves will turn black.
