Cocktails are even more fun when you get creative with the vessels you put them in. You’ve seen pineapple in drinks – try drinks in pineapples!
It adds a nice touch, and also helps flavor your drink, when the liquid mixes with the interior walls of the pineapple. (For this reason, it’s important to pick a cocktail that will mix well with pineapple.) Plus, with pineapple chalices, there are no glasses to clean, and they’re completely biodegradable.
1) Take a whole pineapple and chop off the top, removing the green leaves and two inches of the top of the pineapple. One hint: Hold on to the tops, you may want to use them as drink lids, as a garnish on a platter, or at least to help keep the hollowed pineapples covered and fresh until you fill them with drinks.
2) Stand the pineapple up and see if it sits level. If not, you may want to slice just a bit off the bottom, so that the bottom is flat. Make sure to slice as little as possible, or you’ll end up with a hole in the bottom.
3) Use a pineapple corer to remove the inside of the pineapple. Here’s a tip: If you don’t have a pineapple corer, just run a knife in a circle around the inside of the pineapple, about a half inch inside the skin, going down to the bottom part of the pineapple where it gets hard and firm. Then make four slices across the middle, again going down to the firm part at the bottom, but being careful not to pierce the bottom of the pineapple.
4) Use a large spoon to scoop out the insides and set those aside, either to eat, or to combine in your drink.
5) Fill with the drink of your choice, and garnish with a pineapple wedge and a cherry.
