How To: Roast Peppers
Roasting peppers intensifies their sweetness and it's easy to do at home. Place the pepper on a burner of a gas stove over medium-high heat.
No gas stove? No problem. Cut the peppers in half and char them under the broiler. Or, use your outside grill.
Turn the pepper as it chars until it's black all over.
Steam Is Key
No matter how you roast them, the next step is to place them in a paper bag and let the steam do the work. Cool about 5 minutes so the peppers have time to steam.
When the peppers are cool enough to handle, remove the charred skin and the seeds. Keep a bowl of water nearby to keep your hands clean. To seal in flavor, avoid rinsing the peppers with water unless your recipe calls for it.
Slice them up and put them on your burgers, pasta and pizza, or toss with some olive oil and lemon juice for a colorful salad. You can store roasted peppers covered for a week in the fridge.
