  • Cheesecake
  • Semisweet or bittersweet chocolate, melted
  • Toppings of your choice: crushed malt balls, crushed toffee, chopped roasted and salted peanuts, chopped toasted hazelnuts, cocoa nibs, crushed chocolate-covered espresso beans

Directions

With a melon baller or a very small ice cream scoop, scoop 1 1/2-inch balls of cheese cake and arrange them on a parchment paper lined baking sheet. Secure a lollipop stick into each cheesecake ball and freeze for about 2 hours.

Dip the cheesecake lollipops in the melted chocolate, letting any excess drip off. Then roll the lollipop in any toppings of your choice. Arrange them on parchment paper lined baking sheet to harden for a few minutes. Transfer to a serving platter and serve immediately.

    I made these for a showstopping centerpiece on my dessert table at my Christmas Cocktail Party.I used store bought cheesecake {only to save time}and white chocolate to dip the balls in. I then drizzled red stripes of white chocolate across some and dipped others in white glitter sugar.I stood them up in a bowl filled with white sugar that had red christmas balls in it.It was quite spectacular to look at and even better to eat. VERY EZ to make.My guests all loved.
