Fantastic recipe! I hate cilantro so I omitted it..know you can substitute parsley for cilantro but honestly not needed! I also had a lemon & not a lime & it is just as good..will be saving this for sure!

This will b my keeper definitely!! -- I used shallot instead of onion since that's what I have on hand and I like its mild flavor anyway; tomato gives it a good color-appetizing- and I like a little bit of hints of cumin as well...really quick, easy and delicious!!!!
