ingredients

  • 2 pounds cooking apples
  • 2 tablespoons golden syrup
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon freshly grated nutmeg
  • 6 ounces plain flour (all-purpose)
  • Good pinch salt
  • 2 teaspoons baking powder
  • 4 ounces sugar
  • 4 ounces unsalted butter, melted
  • Generous 1/4 pint (1/2 cup) milk

Directions

Preheat the oven to 350 degress F.
Peel, quarter and core the apples, then thinly slice them into a bowl. Add the syrup, cinnamon and nutmeg, and toss gently to coat the apple slices evenly. Spoon the mixture into a buttered 2-pint (1 quart) ovenproof, deep-sided dish.

Sift the flour, salt, and baking powder into a bowl and stir in the sugar. Make a well in the center and add the melted butter and the milk. Stir to make a smooth batter, then spread it evenly over the apple slices.

Bake in the oven for 40 to 45 minutes or until the sponge topping has risen and is browned. To serve, you can invert the pudding onto a dish or serve from the baking dish. It is, of course, highly improved with cream in generous dollops.

    I have all 4 seasons of the Two Fat Ladies and in season 4 package there is a recipe booklet of Eight Yummo Recipes by these two gracious ladies. The Apple Pandowdy is # 8, and I noticed that the ingredients are different from what is shown here. The main difference being 1 1/4 C of white flour in place of 6 ounces of flour, 2/3 C sugar in place of 4 ounces of sugar, and 1/4C milk in place of 1/2 C milk.
    I made the Pandowdy according to the recipe here on Cooking channel and found it a bit sweet, but tasty none the less. The topping cooked up okay though the amount of flour may have been less. I will have to try it again according to the recipe with the CDs. (submitted by my wife Anita)
