This recipe is rated as difficult, but really isn't. There are no difficult techniques. Took a few shortcuts - used a whole 8 oz. package of presliced baby bella mushrooms and a large jar of unseasoned artichoke hearts instead of preparing the baby artichokes and used only arugula - store had no radicchio. The family loved it. I can see using other vegetables instead of artichokes, such as asparagus. Next time I'll top it with grated parmesan before baking.
