Ingredients

  • 1 1/2 cups cooked brown rice
  • 1/4 cup slivered almonds
  • 1/4 cup raisins
  • 6 cardamom pods
  • 5 whole cloves
  • Pinch salt
  • 3 cups milk
  • 2 tablespoons honey

Directions

Put the brown rice, almonds, raisins, cardamom pods, whole cloves, salt, milk, and honey in a large saucepan and bring to a boil. Reduce the heat to low and simmer for 10 to 15 minutes, stirring occasionally, or until the milk is absorbed and the mixture has thickened and it resembles risotto. Serve the rice pudding hot or cold and top with seasonal fruit such as mango or berries.

    Love this recipe. I have made it many times and have changed a few things. I love cardamom so I add my cardamom pods to my rice as I steam it. I also use almond milk instead of regular milk. As I cook the pudding, I add the cardamom from the steamed pods, roasted cinnamon and some almond extract. So many different things to do with such a great recipe. I make this at least twice a week.
