Cardamom Fennel Brownies

BROWNIES:
  • 1 tablespoon fennel powder
  • 1 teaspoon cardamom seeds
  • 1/2 teaspoon fennel seeds
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
WHITE CHOCOLATE AND CARDAMOM GANACHE:
  • About 1 pound/500 g white chocolate
  • 1 1/2 cups 35-percent whipping cream

Directions

For the brownies: Preheat the oven to 325 degrees F and grease and flour a 9-by-13-inch baking dish.

Place the chocolate and butter in the top of a double boiler and melt over low heat. Let cool slightly. Beat the eggs and sugar together until thick and pale yellow in color. Add the cooled chocolate mixture and stir well to combine. Sift in the flour, fennel powder, cardamom seeds, fennel seeds, smoked paprika and salt, and stir well until completely combined. Pour into the prepared pan and bake until an inserted toothpick comes out clean, about 30 minutes. Let cool.

For the ganache: Chop the white chocolate and place into a heatproof bowl. Place the cream and ground cardamom in a small saucepan over medium heat. Bring to a boil. Pour the hot cream over the white chocolate. Let sit for 30 seconds, and then stir until it is very smooth.

Pour the ganache over the brownies and let cool completely until the ganache is set. Cut into squares.

    These are the best brownies. They are rich and decadent. The texture is more like fudge (which I loved. I made the ganache twice. Once with premium white chocolate and once with white chips. Definitely needs premium white chocolate to do this recipe justice. Love the fennel!

    These brownies are excellent! They are rich and delicious with a hint of spices. I actually cut the recipe in half, baked it in a 8x8 pan at 325 for 30-32 minutes and tested with toothpick and they turned out great. I used half dark chocolate chips and half semi sweet choc chips. Will just try semi sweet next time and reduce the sugar a bit. I used ground spices instead of whole ones as I did not want the crunchy texture in the brownies. Might increase the spices a little next time. I did not use the white chocolate ganache as it seemed like it would be too much sweetness. They are great without the ganache.
