  • 1 cup chopped onions
  • 1 cup tomato sauce
  • 8 ounces tomato paste
  • 1 cup turbinado sugar, such as Sugar in the Raw
  • Half 12-ounce can cola, such as Pepsi
  • 1/2 cup pickling liquid from jarred pickled ginger
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup brewed strong coffee
  • 1/4 cup (4 tablespoons) unsalted butter
  • 1/4 cup hot pepper sauce
  • 2 stalks celery, finely diced
  • 6 cloves garlic, finely diced
  • 3 tablespoons chili powder
  • 3 tablespoons Asian fish sauce
  • 2 tablespoons Dijon mustard
  • 1 tablespoon kosher salt
  • 1/2 cup apple cider vinegar, such as Bragg


Add the onions, tomato sauce, tomato paste, sugar, cola, ginger juice, cilantro, coffee, butter, hot pepper sauce, celery, garlic, chili powder, fish sauce, mustard, salt and 1/4 cup of the vinegar to a large pot. Let simmer until thick, about 20 minutes. Finish with the remaining 1/4 cup vinegar.
