Directions

Preheat the oven to 350 degrees F.

Put the garlic cloves in the bowl of a food processor and pulse until minced. Add the basil, butter, Parmesan, salt and pepper and process until it becomes a smooth paste, scraping down the sides of the bowl as you go.

Slice the loaf of bread in half lengthwise, being careful not to cut all the way through. Using a rubber spatula, spread the garlic-basil mixture on both halves. Put the bread back together like a sandwich and wrap tightly with foil.

Place the bread on a sheet pan and bake for 15 minutes, then unwrap the bread and continue to bake until browned in spots, about 10 minutes more. Slice crosswise and serve warm.

    Pretty tasty but I felt there was too much butter. I cut the recipe in 1/2 as I was making for a few of us and not a large family. I also altered the cooking time slightly as I had 1/2 the loaf size- cooked as indicated (both halves together, "sandwiching" the spread) for only 6-7 minutes, then opened up and cooked another 10 minutes or so to try to get a crusty texture on top. The bread was very saturated in butter and didn't get that crispy, crunchy-ness on the top that we like. The flavors were spot on though, and next time I make this i'll stick to 1/2ing the spread recipe to a full loaf of French bread to cut back on the excess of butter.
