My wife is an amazing cook and these really were a nice brunch treat. Salty, sweet, hearty yet fluffy they had the great breakfast flavors that I love all in one. I must try for anyone and everyone

You had me at goat milk feta and Prosciutto. I love that combo. This was my first experience with beet greens. I liked them. It's a pretty forgiving recipe, too. You could easily substitute the goat milk feta for the tamer cow's milk and substitute spinach in place of the beet greens for the non-adventurous and still have a terrific spin on spanakopita. A+
