This bruschetta can really be a meal in itself. Everyone I have made it for seems to love it, and so easy to make for vegetarians just by leaving out the pancetta. I don't think there is anything I would change about this recipe. It is messy to eat but that almost makes the experience even better. DELICIOUS- thanks Chuck!

The BLT Bruschetta is amazing! Love the arugula combination with the goat cheese. I also made this with Feta cheese instead of goat cheese for my friends that are not fans of goat cheese. It would be great substituted with mozzarella too.
