Directions

In a medium saucepan, bring 1 1/2 cups of water to a boil. Stir in the couscous. Remove from the heat, cover, and let stand for 5 minutes. Uncover and fluff with a fork. Add the feta, tomatoes, olive oil, salt, pepper, olives, cucumbers and lemon juice. Toss until combined. Serve hot or at room temperature.

    I have never had couscous before making this recipe. One word :AWESOME!! This was really easy, really yummy and really healthy! My whole family loved it! The only change I would make is to add a few more kalamata olives for more flavor. Great salad for a busy weeknight. Next time, I will add some grilled chicken to make it a quick weeknight meal. Can't wait to try some of Bobby's other recipes. :)
