  • 1/2 cup reduced-fat buttermilk
FILLING:
  • One 8-ounce package neufchatel cream cheese
  • 3/4 cup confectioners' sugar
  • 1/4 cup plain nonfat Greek-style yogurt

Directions

For the cake: Preheat the oven to 350 degrees F. Spray a 9-by-9-inch baking dish with nonstick cooking spray.

Place the cake mix, buttermilk, oil and egg in a large bowl and, using an electric hand mixer, blend together until smooth. Pour the mixture into the prepared baking dish.

For the filling: Beat the cream cheese until smooth. Beat in the sugar, yogurt, butter and vanilla. Spread over the cake mixture. Bake 40 to 45 minutes. You want the center to be a little gooey, so do not over bake.

    Wonderful cheese cake with great flavor. Made for birthday party and it was a hit!! Only I use the recipe from his book " From Mama's Table to Mine" which is slightly different. Next time I would use spring pan and not the 9x13 pan recommended. & i would use whole 8oz of cheese instead of 6. Have to watch this 1 was done in 35min

    LOVED IT ! My whole family loved it ! I will definately try it with applesauce instead of oil and with a variety of cake mixes ! Variety is the spice of life !! ;

    This was AWESOME!!!! I just substituted applesauce in place of the oil & wawla!! Made it on easter & the whole family loved it!!!
