Lean Multigrain Goulash

  • 1 large red onion, chopped
  • 1 medium red pepper, chopped
  • 1 bay leaf
  • Salt and freshly ground black pepper
  • One 15-ounce can diced tomatoes
  • 3 cups cooked whole-grain elbow macaroni
  • 1 tablespoon chopped fresh parsley, for topping

Directions

Add the olive oil to a medium Dutch oven over medium-high heat. When hot, add the ground sirloin, soy sauce, tomato paste, Italian seasoning and crushed red pepper and cook for about 4 minutes, breaking up the meat with a spoon. Add the garlic, red onions, red pepper and bay leaf and sprinkle generously with salt and pepper. Saute until the vegetables have softened, about 5 minutes. Stir in the tomatoes, lower the heat to medium-low and cook, covered, for another 20 minutes.

Add the elbow macaroni and stir well. Top with parsley and serve immediately.

    This was so so good. I saw this episode with Pat LaFrieda and had to try to this recipe. I added extra dried oregano and basil and 3 extra tbsp of tomato paste. This is very easy to make and doesn't take long to make. Great lean, healthy comfort food. This will be a definite go to for fall and winter.

    FREAKING AWESOME!!!! Instead of ground sirloin I used ground venison which is 85% lean. This is very easy to make and didn't take too long either. I will definitely use this often!
