Lighter and Leaner Pimento Cheese Sandwiches

  • 2 tablespoons chopped fresh chives
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Directions

In a medium bowl, add the Cheddar, mozzarella, yogurt, chives, salt and pepper, green and red peppers and jalapeno. Stir well to combine. Spread the mixture evenly among 4 slices of bread and top with a couple of slices of tomato. Top with the remaining slices of bread.

Spray a large nonstick saute pan over medium heat with nonstick spray. Place the 4 sandwiches in the pan and let cook until lightly browned, about 4 minutes. Flip the sandwiches and continue cooking until the cheese melts, another 4 minutes. Serve immediately.

    Really good, light and flavorful. I used red peppers that were very ripe so also very sweet. I also added about a 1/3cup of mayo for the creaminess. Be warned that the mix will separate and break down a bit after 2 days in the fridge. The whey in the yogurt is the culprit.

    5 stars! first attempt was awesome, second attempt local produce was overripe, was not as pleasant. Also tried with fried egg, but the original recipe with Freshest Vegetables in unbeatable. Will be making this again and again. Thanks!

    Saw this on the show and gave it a try -amazing! I forgot the jalapeño and chives but added extra green and red pepper. I also added some yellow onion in. I'd like to play around and add other veggies like others reviews said but I'm going to use some leftover mixture on a baked baked potato for lunch tomorrow!
