I have made this twice. First time, to recipe. Second, with some changes. I added 1/4 cup parmesan to polenta and used low sodium chicken stock instead of water. I used two slices of turkey bacon instead of canadian bacon (easier to keep on hand. I used canned tomatoes with salt. I then omitted additional salt...and of course... extra hot sauce. This was perfect for our family! Polenta instead of grits is a winner!!!

Really enjoyed this recipe. Made exactly as the recipe said. Will be adding it to my will do again file. Very first time having Polenta and really enjoyed it. We may try this recipe over wild rice next time.

Really tasty, but I did modify a bit. I omitted the yogurt, and substituted a can of chopped tomatoes, onions and peppers for the fresh. A little lame, but saved me time!
To quote hubby "I'll eat that again, any time!"
