Maple Berry Parfait

ingredients

  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup strawberries, cut in half lengthwise
  • 2 tablespoons maple syrup
  • 1/4 cup confectioners' sugar
  • 1 teaspoon grated orange zest
  • 1/2 teaspoon ground cinnamon
  • One 15-ounce container part-skim ricotta cheese
  • 4 teaspoons chopped walnuts

Directions

Combine the blueberries, raspberries, strawberries and maple syrup in a bowl until well combined. Let stand 5 minutes.

Meanwhile, pulse the confectioners' sugar, orange zest, cinnamon and ricotta in a food processor until smooth. In each of 4 parfait glasses, alternately layer the berry mixture with the ricotta mixture, ending with the berries. Top each with 1 teaspoon of toasted walnuts.
