Directions

Preheat the oven to 425 degrees F.

Place the chicken thighs in an 8-by-8-inch baking dish. Whisk together the olive oil, chili powder, garlic, orange zest and orange juice in a small bowl. Pour this mixture over the chicken thighs and leave to marinate at room temperature for 20 minutes.

Transfer the baking dish to the oven and roast until the chicken is cooked through, about 20 minutes.

    This was good but could have used more orange. I thought this when I was making them as my mouth was watering at the concept during preparation so I even through in a little extra orange juice for good measure. I even grilled them to add the little something extra. The bits that I did get that tasted like a hint of orange were great but these were far and few in between. I think the next time I try this I am going to use two oranges and two zest. I have not given up on this one because of the few bites that were hinted with orange. Those were delicious. I even marinated with my food saver and over night with the original recipe to see if I could get the orange flavor to stick. Again will try two oranges next time to see what happens. I RE read the recipe. Maybe I was suppose to bake the whole thing with the marinate in the oven but this is not clear in the instructions.
