Sausage, Egg and Cheese Strata

  • 2 scallions, thinly sliced
  • One 8-ounce loaf whole-wheat Italian bread, cut into 1-inch cubes
  • One 7-ounce package frozen fully-cooked turkey sausage patties, thawed and coarsely chopped
  • 1 cup reduced-fat shredded 4-cheese Italian cheese blend

Directions

Spray a 9-by-13-inch baking dish with cooking spray.

Whisk together the milk, salt, cayenne, eggs, egg whites and scallions in a large bowl. Stir in the bread cubes and sausage and let stand 15 minutes, stirring occasionally.

Spoon the bread mixture into the baking dish. Cover and refrigerate at least 8 hours or overnight.

Preheat the oven to 400 degrees F.

Remove the casserole from the refrigerator and let stand 10 minutes. Evenly sprinkle the cheese over the top and bake uncovered until puffed and golden, and a knife inserted in the center comes out clean, about 45 minutes. Let stand 5 minutes before serving.

    This is such an easy recipe to modify. The reviewer tips on adding the cheese later were helpful. I switched two ingredients: I used reduced fat sharp cheddar - family preference and apple-chardonnay chicken sausage -what I had on-hand.

    This was really good. I noted what the previous person said and cooked it for 30 minutes before adding the cheese and cooking for the last 15 minutes. I think next time I'll cook it for about 40 minutes before adding the cheese and cooking an additional 10 minutes, I would like the bread to get a little more brown before adding the cheese. Also, instead of having it be 8 servings, I cut it into 6 servings, and it still only came to 256 calories per serving, so still low cal with a bigger portion size.

    Made this for Easter brunch. Really delicious! Next time I make it I will wait and sprinkle the cheese on for only the last 15 minutes of cooking time.. it browned really fast.
