Ingredients

  • 1/2 cup freshly squeezed orange juice
  • 1/4 cup freshly squeezed lime juice
  • 1/2 small red onion, coarsely chopped
  • 2 cloves garlic, coarsely chopped
  • 1/4 cup fresh basil leaves
  • 2 tablespoons chopped cilantro leaves
  • 1 tablespoon honey
  • 1/2 cup canola oil
  • Salt and pepper
  • 1/2 head red cabbage, finely shredded

Directions

Combine all ingredients, except cabbage, in a blender and blend until smooth. Season with salt and pepper, to taste. Place cabbage in a large bowl and toss with the vinaigrette. Season with salt and pepper and let sit 30 minutes in the refrigerator before serving.

    Really enjoyed this one. I had to change it a bit because of availability of some ingredients but I enjoyed the result anyhow. I also used the entire fresh fruit along with the fruit juice that it calls for. The texture of the pureed fruit pulp with the juice in the dressing added an almost creamy texture which was a nice contrast to the crunchy red cabbage.
