This was a perfect potato dish for our Cinco de Mayo brunch! We didn't have any potatoes on hand so we substituted a large can of whole cooked potatoes that we large diced. We also added about half a cup of roasted red peppers (diced. Everything worked out perfectly with a mouthful of flavor! We love brunch @Bobby's -- the South of the Border menu was a hit.

I tried it this morning...it was great !!!...and I even put an egg on top, which should be sunny-side up and runny yolk, definitely !!!! or pouched egg will b fine too, if u want a little light version...^^--
And more, if u want it more spicy, why not drizzling w/ chili infused EVOO when u serve....it's heaven !!!!!

So many things going on when you eat this... great flavors. I did add cumin, as he did on the show, although not listed above. It was better the second time I made it... I wasn't afraid to let it really crisp up on the bottom. This will be a "go-to" for me.
