Heat a few inches of oil in a deep pot to 350 degrees F.
Bring 1 1/2 cups water, the sugar, salt and vanilla seeds to a boil in a pot. Add the flour and mix over medium heat until all the lumps are gone and the flour is cooked down, 15 to 20 minutes. Transfer the dough to a mixer fitted with a paddle attachment. Add the eggs, one by one, until combined.
Pipe the dough in even lengths directly into the hot oil and fry until golden brown, 5 minutes. Roll in cinnamon and sugar.
