Ingredients

  • 2 pounds medium waxy potatoes, whole and unpeeled
  • Kosher salt
  • 3 tablespoons butter
  • Handful or 2 chopped fresh parsley sprigs

Directions

Bring a large pot of water to the boil. Salt it and add the potatoes. Cook the potatoes until tender. Drain and peel. Toss with the butter and parsley to coat. Serve.
