This tastes terrific! I prepare the veggies for several at a time and keep them in the fridge ready to cook. I only use egg whites and I can't taste the difference. I have tried adding a little cooked turkey sausage crumbled instead of the beans. I put half a slice of pepper jack cheese next to the tortilla when warm the tortilla in a non stick skillet. It adheres well to the tortilla and then I add the cooked egg whites and pile on all kinds of cooked veggies. Red bell pepper and any type of squash or onion work particularly well. I toss them in a non stick skillet till they are tender. This is very filling. I think mine are lower calorie than this recipe .
