    I grew up making gnocchi's with my mother and grandmother. we never used a board with grooves to roll them out on. we just roll them fast on a floured surface with the same technique you showed only much faster. This was a great recipe but wanted some cheese on too at the end. I rarely used shaved hard cheeses on my pasta but for gnocchi I like the sharpness against their lightness.
