Ingredients
- 3 cups green or red cabbage, thinly sliced or shredded
- 2 carrots, julienne or shredded
- 1 red pepper, julienne
- 2 scallions, thinly sliced
- 1/2 medium onion, julienne
- 1/2 cup mint, chiffonade
- 1/4 cup peanut oil
- 1 tablespoon sesame oil
- 2 tablespoons lime juice
- 2 tablespoons sugar
- Salt
- Fresh ground pepper
Directions
Combine the first 6 ingredients in a bowl. In another bowl, mix peanut and sesame oil, lime juice, and sugar until dissolved, then season with salt and pepper to taste. Pour over cabbage mixture.
