    Delicious! This tastes more like a lemon cake than a zucchini cake, make sure you like the taste of lemon. I think the combo is fantastic. I used a total of 3 medium lemons for all the zest and the juice; I used a little shy of 1/4C zest in the cake just because I was concerned that it could have been a typo...but it's not! If you are not sure you like that much lemon flavor use 2-3T of the zest in the cake. The glaze makes the cake so moist. I used cream cheese frosting as follows: 8oz softened cream cheese + 1 stick softened butter (unsalted) + powdered sugar (did not measure - maybe 3-4C, add to taste and consistency) + a squeeze of fresh lemon juice. This is a new favorite cake!!

    1/4 c. lemon zest in cake plus the 1/4 c. lemon juice in glaze, isn't that a bit much??? Hope s/one whose made this cake will answer my question???

    I wasn't expecting anything more than just your average zucchini bread but this was fabulous. Very moist and the lemon glaze was the perfect match. I have made it twice in three days because my boys LOVE it. Not overly sweet either. Fantastic with pecans as well
