Super easy to make and prepare ahead of time. One is those meals you make and take on the boat and just put in a wrap and be done. A couple of things to note 1 I only put in a 1/4 onion and that was a lot for everyone. 2 if no Mango you can sub on mandarin oranges just make sure you drain them and be careful with the extra liquid content. 3 if you buy a store rotisserie chicken, pull the chicken that night and set aside for when you need it. 4 I found Spanish rice pairs very well and works swimmingly rolled up in the wrap. 5 I'm thinking a grilled tuna pulled apart would be a good substitute for the chicken.
