, salt, eggs and parsley in a bowl and mix until well blended. Shape the mixture into six even patties.
Heat the vegetable oil in a large skillet over medium-high heat. Add the burgers and cook until cooked through and nicely browned, 3 to 4 minutes per side.
Slather the whole-wheat buns with some of your favorite mustard. Add the patties and top with arugula.
