Im a mexican food cooking "freak" and this is real good, sweet tasting enchilada sauce! Never use canned, its an insult to your tastebuds. I added more salt to taste and a tablespoon of chili powder and half tablespoon of onion powder but thats just me. Possibilities are really endless with this sauce, you can spice it up as needed, however you like to your taste, but it is a splendid, unexpected sweet taste with the new mexico chiles as a base.
