I thought the cauliflower would be a smart addition to this classic casserole, but I wasn't that crazy about it. I guess I forgot that cauliflower is a kind of blah vegetable...maybe that's just me though! I added peas in addition to the cauliflower, so next time I think I'll just do more peas. I also didn't have sherry so I subbed white wine and that worked out well.

This was delicious. I made a few changes. I didn't have sherry, but the overall flavor was yummy without it. I used half and half instead of heavy cream and to shorten the cooking time I bought a rotisserie chicken. Finally, I substituted whole grain egg noodles for white noodles. The topping was crispy and brown and no one noticed that there was cauliflower in the casserole. It makes a lot and you will have leftovers.

I made this recipe including the chicken stock. I froze the wonderful stock for future use! My family loved this recipe. I used half of one of the colorful kind of cauliflower and subbed the other half for some broccoli to add a little more color to the dish. Can't wait to use the rest of the delicious poached chicken in other recipes this week!

Despite the fact that I totally forgot the cauliflower and did not have the heavy cream. I use milk instead because that was I have in hand. The dish came out delicious, my kids and I enjoy it very much. There was some left over and I had for lunch the next day and it tasted just as good or even better. This a recipe is a defintely a keeper.

I will be cooking this at least once a month. Might freeze half as there are only two of us most of the time.
