Ingredients

  • 1 tablespoon kosher salt
  • 1/2 tablespoon Sichuan peppercorns, toasted 
  • 1 teaspoon crushed red pepper
  • 1/4 teaspoon freshly ground white pepper 

Directions

Combine the salt, Sichuan peppercorns, crushed red pepper and white pepper in a spice grinder and grind fine.

Sprinkle any meat, fish, tofu or poultry liberally with the spiced salt, then grill or saute according to your recipe.
