Overall I really like the recipe. This was totally my fault but they didn't come out as light and fluffy as I wanted so make sure you really don't overmix and I also forgot to slit the tops :( whoops! so they stayed kind of doughy on the inside. Still tasted delicous though! I'm going to try them again today but this time without overmixing and making sure to slip the tops. also I don't have shallots right now so I think i'm going to try it with roasted garlic! :

So good! I didn't have rosemary, so I used fresh thyme -- they were still great. Make sure not to overmix the batter. I've made popovers in the past where they came out like bread because of overmixing.

These popovers are absolutely delicious! I'd never made popovers before, and these are so easy. My husband loved them and we were fighting over the last one. The carmelized shallots,rosemary and cheddar cheese made for a savory, warm bread with lots of umani. I'm definitely adding them to my permanent recipe collection.
