Very good and SUPER easy!! I didn't have any thyme so I tried rosemary instead and I also didn't have the parmesan rinds but it still turned out really well.

Very easy and tasty. I'm using large heirloom tomatoes that are quite juicy. I tried to strain at the end, but it just left me with watery tomato soup. I ended up leaving all the ingredients in and just pureed longer ( I don't mind the seeds left in there. Next time i won't add the water. I also added a sprig of mint to the thyme - tied all sprigs together with kitchen string so i could easily remove. You definitely need the cream, think you can halve butter.
