    Help! This sounds very tasty...but most soups are made during cold weather and most tomato soups call for fresh tomatoes...the tomatoes in the stores aren't very good at this time of year Can anyone give equivalents for fresh>canned tomatoes? How to use canned tomatoes instead of fresh ones?

    Very good and SUPER easy!! I didn't have any thyme so I tried rosemary instead and I also didn't have the parmesan rinds but it still turned out really well.

    Very easy and tasty. I'm using large heirloom tomatoes that are quite juicy. I tried to strain at the end, but it just left me with watery tomato soup. I ended up leaving all the ingredients in and just pureed longer ( I don't mind the seeds left in there. Next time i won't add the water. I also added a sprig of mint to the thyme - tied all sprigs together with kitchen string so i could easily remove. You definitely need the cream, think you can halve butter.
