    Tweaked this a good bit. I had 20 Habaneros that I had to use up, so I used:

    20 Habaneros
    3 green Bell Peppers
    2 Italian Roasting Peppers
    2 Onions
    10 cloves garlic
    2 bunches cilantro
    2 carrots
    The zest and juice from 2 limes
    1-3/4 cups White Vinegar
    Salt
    Black Pepper

    Roasted all the veggies and put them in the food processor and pulsed them to a moderately fine chop. Added zest, lime juice, cilantro, salt, and pepper and pulsed again. Added 1 cup of vinegar and pulsed again. It was still a little more "solid" than I wanted so I added another 3/4 cup of vinegar and pulsed until I got a pureed consistency. There is definitely plenty of heat but the taste is incredible. Recipe yielded 2-1/2 pints. I put a half a pint in the refrigerator for immediate use and hot water canned the rest. Will definitely make this again!

    I have tried the Yucatan Extra, Extra hot salsa and it takes just like this one but this is better and fresh. Thank you Chuck.
