    This was great! I love jerusalem artichokes and roast them frequently. Usually I cut them into 1 in pieces, but I came across Chuck's recipe suggesting slicing them in half and like it way better. It's easier to flip them because you can tell which ones you've flipped. And It's harder to overcook them. Simple difference, but really helpful.
