The person that said soaking them was a mistake is wrong. These were great and I alss soak my potatoes before I mash them. By soaking them you remove enough starch that you can use a blender with mashed potatoes without turning them to glue. The secret is to dry them properly. Good job Chuck with a healthier version of fryed potatoes. I did use a rack rather than but them on tin foil so I didn't have to flip them

I enjoyed these and used Chuck's tip of rinsing the potatoes. I also flipped them half-way through cooking. I found them to be crispy and soft in between. Very good.
