I spent a week in Newport Beach, CA and I had the opportunity to buy black cod, just caught that same morning. I decided to use it in this recipe, but I did not have any fresh dill so I used parsley instead. I had never poached fish in milk, but it was surprisingly delicious. I tried the bread in garlic olive oil like Chuck's recipe reads and I tried it just toasted without the oil and I liked both of them.
My husband really loved the fish prepared this way, even my 9 year old girl enjoyed it.
I will definitely prepare this dish again!
