Heat the oil in a large skillet over medium heat. Add the onions and bell peppers and cook until tender but not mushy, about 15 minutes. Season with salt and pepper.
Drizzle a little olive oil in a large skillet and cook the sausages over medium heat until golden brown and cooked through. Mix in the peppers and onions and divide among the rolls.
