Ingredients

  • 6 large eggs
  • 1 1/4 cups vegetable oil 
  • 1 tablespoon anise extract 
  • 1 teaspoon vanilla extract 
  • Juice of 1 lemon 
  • Juice of 1 orange 
  • 1 3/4 cups sugar 
  • 1 tablespoon anise seeds, optional 
  • 4 cups all-purpose flour 

Directions

Special equipment: pizzelle iron

Preheat a pizzelle iron.

In a large bowl, add the eggs, oil, extracts, lemon juice, orange juice, sugar and anise seeds if using. Mix until thoroughly incorporated. Add the flour and mix to make a creamy batter.

When the pizzelle iron is hot, using a teaspoon, add batter to the center of each grid. Close the iron and squeeze until light brown. Once finished, lay on parchment paper to cool. Store in a clean box or tin can.
