ingredients

  • 1 1/2 ounces coconut rum
  • 1 ounce cream of coconut
  • 1 ounce melted vanilla ice cream
  • 1 ounce pineapple juice
  • 1/4 ounce coconut water
  • 1 coconut, top cut off, for serving, optional
  • 1 ounce dark rum, such as Myers's, optional
  • Mini cocktail umbrella, for garnish, optional

Directions

Combine the coconut rum, cream of coconut, vanilla ice cream, pineapple juice and coconut water in a blender with 1 1/2 cups ice and blend until smooth. Pour into a chilled glass or serve in a real coconut. Top with a floater of the dark rum if desired, and garnish with an umbrella.
