ingredients

  • 2 cups plain yogurt
  • 1 cup vegetable broth
  • 1 tablespoon chopped fresh mint leaves
  • 1 tablespoon tamarind pulp*
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon coriander powder
  • 1/4 teaspoon grated ginger
  • 1/8 teaspoon paprika
  • Pinch salt
  • *Can be found in specialty Asian and Indian markets.

Whisk the yogurt, broth, mint, tamarind pulp, ground cardamom, coriander powder, grated ginger, paprika, and salt in a bowl and then place in the refrigerator for at least an hour. Serve the soup chilled.
