Corn Chowder Salad

Not really corn chowder but made with the same ingredients that might go into one, this is a burst of summer. When corn season is over, you can substitute 3 cups of frozen corn kernels. Scraping the corn off the cob is really easy; cut off a small slice from the bottom of each shucked ear so it will stand upright and then, working in a large bowl, cut from the top to the bottom to release all the corn kernels.

ingredients

  • 2 teaspoons olive oil
  • 3 slices bacon (about 2 ounces), cut crosswise into 1/2-inch pieces
  • 1 Yukon gold or other waxy potato (about 8 ounces), peeled and cut into 1/2-inch dice
  • 1 red bell pepper, cut into 1/2-inch dice
  • Salt
  • 6 ears corn, kernels scraped from the cob with a knife (about 3 cups)
  • 2 tablespoons cider or rice vinegar
  • 1 small red onion, halved and thinly sliced
  • Red pepper flakes

Directions

In a large skillet, heat the oil over medium-low heat. Add the bacon and cook until crisp, about 5 minutes. Using a slotted spoon, transfer the bacon to a paper towel to drain. Measure the fat remaining in the skillet--you need 2 tablespoons. (If the bacon was particularly lean and you don't have enough, add olive oil to make up the difference.)

Add the potatoes to the skillet and cook, tossing occasionally, until golden brown, about 5 minutes. Add the bell peppers and some salt and cook, tossing occasionally, until the peppers and potatoes are tender, about 5 minutes longer.

Add the corn and cook until piping hot, 3 to 5 minutes. Transfer to a bowl. Add the vinegar and onions, season with salt and red pepper flakes and stir to combine. Serve warm, at room temperature or chilled.

    Went a bit heavy on the potatoes and a bit light on the corn (2 lg. Yukon golds, unpeeled & 5 ears corn and instead of red bells used 1/2 jalapeno & 1 Anaheim chili, both sauteed along w/ the red onion for a bit of a kick. I sprinkled the top w/ a bit of fresh red onion for crunch. Made a few hours in advance and just pulled out of the 'fridge 2 hrs. before serving at room temp. It was a great summer side that was forgiving of my modifications. I'll absolutely make this again -- and maybe add a bit of fresh parsley or basil for additional color. I used a non-stick skillet (was concerned about the starch in the potatoes and was pretty liberal with the additional bacon grease. Yum! As made, it served about 8 as a side with no leftovers.
