These cookies are amazing! Definitely cream for 8-10 minutes and refrigerate for at least an hour before baking. They are the perfect balance of sweet and savory. I have used the cookie mix from WS, however this time I bought the freeze dried corn and made this recipe from scratch and so easy and worth it!

Christina also recommends chilling the cookie dough before baking to make sure the butter in the cookies doesn't just melt immediately when you put them in a hot oven.

oops!! I actually bought the box mix from William-Sonoma and read the recipe wrong! I accidentally creamed the dry mix with the egg, instead of the separate packet of sugar that comes with it! I wondered why it was so dry and why on earth it should be mixed that way! . I wish the instructions explained why it was so necessary to cream it for 10minutes, like your recipe does, duh! then I wouldn't have made that mistake. I should have known, but I just thought it was some new fangled NYC way of making cookies. anyway, they are in the fridge now, it will be interesting to see how it works out. It was an expensive box mix too, darn it!

These cookies are unlike anything I've ever tasted or baked before. They are unbelievable, as in, I can't quite believe what i am tasting. Are they sweet? Are they salty? Both? What? Everyone who tasted them had a strong though slightly confused reaction: from "wow, amazing" to "what?" to "really yummy and sweet" to "more savory than sweet" to my favorite comment, from my brother-in-law "wow, it's really good, you could wrap this around a hot dog and eat it" to ... Well, you get the idea. I love these cookies, but it was not love at first bite; it was similar to my Crack Pie--same cookbook/bakery--experience. At first I thought, that was good, but no big deal. Then I was drawn back to the kitchen for another bite...and another, and another... Until I realized i had eaten half the pie by myself in less than an hour. Likewise, the corn cookies are wildly addictive. I crave them. And always want more. Except when I don't. But then I do. What? :-
