Ingredients

  • 3 pounds dried cannellini beans
  • 1 tablespoon salt 
  • 2 teaspoons ground black pepper 
  • 4 cloves garlic, roughly chopped 
  • 1/2 cup olive oil, plus more for drizzling
  • Freshly grated Parmesan, for garnish 

Directions

Place the beans in a large bowl and cover with water. Soak overnight.

Drain the beans and place in a large pot, cover with fresh water. Add the salt, pepper and garlic, and bring to a gentle simmer over medium-high heat. Cook until beans are soft, 35 to 45 minutes.

Drain the beans and return to the pot, then drizzle with half of the olive oil. Using a hand masher, mash the beans and garlic until mostly smooth, but they still have some texture. Add the remaining olive oil and mix. Sprinkle some Parmesan at the bottom of the serving bowl, place the mashed bean mixture on top, and then drizzle with olive oil. Top with additional Parmesan to garnish.
